Dr. Jung is interested in market structure and strategic behavior of economic agents along the agricultural and food supply chain. His doctorate research focused on how ethanol plants strategically react to market structure for procuring corn as an input to produce ethanol and estimating impacts of the behaviors on management efficiency and overall market efficiency. Recently, he has been working in big data analytics on food markets, aimed at enhancing the transparency of and gaining appreciation for the complexities of food markets. Topics of interest encompass provision of information on prices of online grocery markets, spatial market structure and pricing strategies of food service business, and the use of social media analytics to analyze diverse topics from public reaction to government policies to consumers’ reactions/perception on food-related topics.
